I call this Kale Lemon pizza recipe, The Kale Lemonade. If you’ve been to a meal at our house, you know that kale is a big deal over here!

 

The Kale Lemonade

My best advice with this pizza is to really know how to choose and work with your kale. Don’t buy that curly bright green kale! Go for the Dino or Lacinato Kale, the dark leafy green. Nothing goes better with kale and makes it’s tough exterior taste more amazing than lemons, of course! So what better combo could I come up with for my pizza than these two ingredients. It’ll have you saying oh-KALE-yah!

 

Kale Lemon Pizza Recipe

Kale Lemon Pizza Ingredients

Makes 1 single pizza

• 1 Pizza dough of your choice
• 1/2 cup Lacinato Kale, remove stems then break into pieces
• 1 tsp of Pine Nuts
• 1/2 of a Lemon, juiced
• 1/3 cup of Parmigiano Reggiano cheese, shredded
• 1/3 cup of low-moisture Mozzarella cheese, hand separated not pre-shredded

 

HOW TO MAKE THIS KALE LEMON PIZZA RECIPE

1. Follow the instructions for making the pizza dough you choose. Once the dough is ready for the oven add the ingredients in the following order.
2. Once your kale is washed and de-steamed, put it into a bowl. Add some lemon juice and massage the kale for 1-2 minutes.
3. Sprinkle the parmigiano reggiano cheese over the sauce as the base for your ingredients.
4. Top that with the kale and the pine nuts.
5. Now add the heavier mozzarella cheese on top of the kale pieces to keep them down and to keep them from getting too burnt in the oven.
6. Now you can pop that pizza right on in to the oven. Cook it according to the instructions from the pizza dough recipe you used.
7. Then it’s time to sit back, relax and grab that lemon water. Enjoy!
